This recipe from Jamie Oliver is simple, but extremely satisfying. The patties are packed with sweetcorn, frozen peas, broad beans and a ton of seasoning and there's even a recipe for a spiced vegan mayo and crispy onion rings to take your burger to the next level you might also want to try some halloumi recipes to fill your veggie burger with too.
Mushroom, pepper and pesto strudel
Switch up your Sunday roast with this flaky filo pastry strudel filled with peppers, garlic mushrooms and a homemade pesto (which has numerous five star reviews). It only takes an hour to cook and will be perfect paired alongside your favourite veggies and some mash.
Coconut and squash dhansak
Pushed for time at dinner? This creamy and healthy (yes healthy!) curry can be made in just 20 minutes. It's full of superfoods, including spinach and butternut squash, as well as coconut milk and lentils. Accompany alongside some steamed rice and nan and you're onto a winner dinner.
Four-cheese and spring vegetable lasagne
Meat will not be missed in this creamy cheese and veg lasagne. Peas, broad beans and spinach are layered in between pasta sheets with ricotta, mozzarella and hard cheese and a crumbling of goat's cheese across the top. It does take a little longer to prepare and make, but we promise it'll be the ultimate indulgent dinner.
Vegetarian chilli
You can't beat a chilliand this one is clearly as satisfying as it looks with one person even reviewing it as "magical". Walnuts, carrots and mushrooms create a brilliant 'meat-like texture' and the chilli sauce is packed full of wonderful spices and herbs. It takes 1 hour and 15 minutes in total to make, but everyone has said it's well worth it.

This pea and mint soup only consists of four ingredients and takes five minutes to prep. Perfect to enjoy cold in the summer or warm during the winter.
'Best' veggie stir fry
Who doesn't love a stir fry? They're healthy and super quick to make, so they're great for a midweek dinner or lunch and this one can be ready in 35 minutes. Another Jamie Oliver recipe, but this one in particular is great for the immune system as it's full of carrots, which are high in vitamin C, as well as broccoli, peanuts, honey and plenty of ginger - delicious!
