Over the last few years, gin has become an incredibly popular alcoholic drink for lots of us and there are so many delicious varieties to try, one of which is rhubarb gin.
While you can easily pop to the shop to buy a bottle of rhubarb gin, it's worth thinking about making your own as not only is it really easy, but it's incredibly satisfying to be able to serve your very own rhubarb gin to friends and family.
How to make rhubarb gin
Try this recipe from organic gardener and blogger Lovely Greens.
Ingredients
1kg Rhubarb
1l Gin
400g white sugar
Method
- Remove the leaves, wash and trim the rhubarb stalks.
- Cut the stems into 3cm pieces and put them in a large jar with the sugar.
- Seal the lid and give the rhubarb and sugar a good shake to thoroughly combine. Leave overnight.
- After 24hrs, the sugar will have drawn out a lot of juice from the rhubarb. Add the gin, seal the jar, and give it another good shake. Leave for 4 weeks giving the jar an occasional shake.
- After four weeks, the rhubarb gin is ready. The liquor will be clear and a beautiful pink in colour but you can strain it through muslin if you want even more clarity. The rhubarb pieces can be eaten, but watch out, they will be boozy.
- Bottle in clean and sterilised glass bottles and use within six months.

How to serve rhubarb gin
• Mix with ginger ale or mediterranean tonic with a slice of orange
• Serve on ice with elderflower tonic water and garnish with fresh raspberries.
• For a tasty rhubarb and ginger gin, simply add 2-3 cubes of fresh ginger.
Grow your own rhubarb
If you fancy going one step further, what about growing your own rhubarb instead of buying it from the shop?
Rhubarb can be grown from a packet of seeds, however, it is more common to plant established plants between autumn and spring. Alternatively, you can also buy plants in pots in active growth which can be planted at any time of year.
