One of the things we love most about this healthy pancakes recipe is that you can easily get away with serving them for breakfast, lunch or dinner. Just er, maybe not all in the same day.

As much as we love pancakes though, they aren't typically the healthiest meal choice. Unless you try our healthy banana pancakes recipe that is! The healthy pancake recipe below swaps flour and milk for bananas and oats for fluffy American-style pancakes that take just minutes to make. We love them for a filling breakfast or even lunch, particularly on weekends when you fancy a treat.

How to make healthy pancakes

Ingredients

2 bananas

2 eggs

64g rolled or old-fashioned oats

1/2 teaspoon baking powder

Pinch of salt

Method

1. Add the peeled banana, eggs, oats, baking powder and salt to a blender and combine

2. Blend until the mixture is smooth and combined well.

3. Leave the batter to stand for 10-20 minutes until it has thickened slightly.

4. Heat a non-stick frying pan over a medium heat. Use coconut oil or a little olive oil if needed.

5. Fry spoonfuls of the batter until golden brown on both sides.

6. Serve with your toppings of choice. We recommend syrup and your favourite fresh fruit such as strawberries, raspberries and blueberries.

Are pancakes healthy?

Traditional pancake recipes like Delia's aren't considered healthy as they're often made using white flour and butter with syrup drizzled on top. However, if you swap the flour and milk out for bananas and oats as we do in this recipe it makes them far more nutritious and you may even want to use it as a healthy breakfast recipe.

For a healthier topping, swap out the syrup for some low-fat natural yoghurt or drizzle of peanut butter and top with fruit or compote.

This healthy banana pancake recipe works really well as a basis for all healthy pancakes, whether it's as a desert or breakfast. If you are making it for breakfast, some of our favourite healthy breakfast pancake toppings include fresh berries, greek yoghurt, crunchy granola, chopped nuts, dried fruits or more banana.

If you're wanting something slightly naughtier for a breakfast as a treat, then we'd suggest maple syrup, Nutella, crispy bacon for a savoury choice or peanut butter.

Can you freeze these pancakes?

Yes, if you want to make these pancakes ahead of time, they're easy to reheat from frozen. Simply place your cooked pancakes in a freezer safe bag and freeze for up to 3 months. When you're ready to eat them, pop them on a plate in the microwave until they're heated right through.

What flour to use in pancakes?

If you're not a huge fan of banana flavour or are keen to stick to flour when making your healthy pancakes, then you may want to try a healthier flour such as whole-wheat or another whole-grain (cornmeal, oats or buckwheat) flour which tend to contain much more fibre compared to white flour.

If you're gluten-free, you may want to try coconut flour or a gluten-free flour alternative.

Another popular alternative flour choice is almond flour which is made from finely ground almonds. It's suitable for vegans, gluten-free, high in fibre and a source of both vitamin E and protein. It does tend to be much more expensive than your standard flour however.
