Gluten-free bread is harder to master than it seems! As the flour in gluten-free bread contains no gluten, it has little elasticity. Over the years, gluten-free foods have been on the rise with more and more people realising they have food intolerances.
The great news is now that it is such a booming industry, availability and quality of store-bought gluten-free flour and bread has been getting better!
You can also make gluten-free bread easily at home. This recipe is for a white loaf of bread, perfect for making sandwiches or toast for breakfast. Plus you get the bonus of that warming smell of freshly-baked bread!
Easy gluten-free bread recipe
As mentioned before, gluten-free flour has no structure as it does not contain the gluten protein, this means that kneading is not necessary.
Do not be alarmed with the bread if it is a batter consistency, that is what it's meant to look like!
Additionally, this recipe can be made vegan by switching the egg whites for a mixture of chickpea flour and water.
This recipe is a gluten-free oven-baked white loaf from Doves Farm. Perfect for making sandwiches or toast for breakfast.
Cooking time: 55-60 minutes
Servings: 1 loaf
You will need:
1kg/2lb bread tin and mixing bowl
Ingredients
• 2 egg whites or 20g of chickpea flour + 40ml of water
• 2 tbsp sugar
• 1 tsp salt
• 6 tbsp oil
• 1 tsp vinegar
• 425ml water
• 500g white bread flour (we recommend FREE White Bread Flour)
• 2 tsp of quick yeast
• oil, for tin
To make this loaf vegan, swap the egg white for 20g FREE Chickpea Flour and 40ml water
Method

Rub some oil around the inside of a 1kg/2lb bread tin.

Put the egg whites (or chickpea flour + water), sugar, salt, three spoons of the oil, vinegar, and water into a bowl and whisk together.

Add the flour and yeast, whisking to a smooth and thick batter.

Drizzle the remaining three spoons of oil over the sticky batter and, using a spatula turn the mixture a couple of times in the bowl to encourage the formation of a doughy mass.

Tip the dough into the prepared tin and smooth the top.

Invert a large mixing bowl over the tin and leave until the dough has risen to 7mm/¼” below the top of the tin, about 60-90 minutes.

Pre-heat the oven.

Bake for 55-60 minutes at 220˚C, Fan 200˚C

Turn out the cooked loaf to cool on a wire rack.

Allow the bread to cool completely before slicing.
